1、thermal stability
Pigment retention rate of red radish during heating
Radish Red E60, color changes during heating at 80°C (picture left) and 100°C (picture right)
Under different heating conditions, with the increase of heating time, the color fading of red radish pigment is not obvious, indicating that red radish pigment has good thermal stability.
2、Light stability
In the aqueous solution of E60 red radish pigment, the color fading of the red radish pigment is not obvious with the prolonging of the light time, indicating that the light stability of the red radish pigment is not good.
